dc.description.abstractThe goal of this work was to understand the diverse susceptibility of several red wines to the increase and production of phenols by yeast Dekkera bruxellensis ISA 1791. In first place was to evaluate the concentration effect of tannins on the growth, observing a lost of viability increased with enlargement of you concentration, without, however lead to complete cell death. To evaluate the answer of growth and production of 4-etylphenol in wines of elementary grape varieties were used red wines (Touriga Nacional, Syrah, Cabernet Sauvignon and Baga) from different regions (Alentejo, Ribatejo, Bairrada). In case of elementary wines, did not verified growth nor production of 4-etylphenol because of the cell death in less than 24 hours. However, when the values of ethanol were corrected (12%v/v), pH (3.50), total acidity (7 g/l), tannins (IPT 80) and in the absence of free sulphur dioxide was registered an increase of cellular growth as a reply to that same cellular growth in all samples. It was observed one production of 4-etylphenol as reply to that same cellular growth, with income which vary between 140 μg/log CFU in Baga variety and 978 μg/log CFU in Syrah variety in Alentejo.por
